At its core it’s just three ingredients, atta (wheat) flour, water and salt, rolled thin and cooked on a dry pan. So when people ask “is chapati vegan,” the answer is usually a happy yes.

There’s one thing to watch, and it’s the same thing that trips up a lot of Indian breads: ghee. Here’s how to keep your chapati vegan.

The ghee question

The one thing that can turn a chapati non-vegan is ghee, which is clarified butter. It shows up in two places:

  • In the dough: some recipes add a spoon of ghee or oil for softness. Oil keeps it vegan; ghee doesn’t.
  • Brushed on top: many cooks smear ghee or butter over the hot chapati to make it glossy and soft. This is the most common culprit.
